Blueberry Pie Bars

So I know that frozen items have a stigma, but hear us out! When blueberries are flash frozen at their peak ripeness they are delicious! Perfect for baking and jams. The freezing actually enhances the sweetness and the flavor of the blueberries. And you won’t even be thinking about stigmas when you eat these blueberry pie bars. Trust me on this one.
For the crust and crumble:

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon of salt
  1. Preheat oven to 350F.
  2. Line an 8-inch square pan with aluminum foil and spray with cooking spray.
  3. In a large, microwave-safe bowl melt the butter.
  4. Add the sugars and whisk to combine.
  5. Add the flour and salt, and stir to combine. The mixture will be very dry and sandy with some larger, well-formed crumble pieces.
  6. Reserve a heaping 3/4 cup of the crumble for the topping.
  7. Transfer the remaining crumble to the prepared pan, and using your fingers, hard-pack the mixture to create an even, smooth, flat crust ad reserve.

For the filling:

  • 1 large egg
  • 1/2 cup sour cream (lite is okay)
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon all-purpose flour
  1. In a medium bowl, add the egg, sour cream, sugar, vanilla, and whisk to combine.
  2. Add the flour and whisk to combine.
  3. Evenly pour filling over the crust and jiggle pan to help distribute it or smooth it with a spatula.

For the blueberry layer:

  • 2 cups of frozen, unthawed blueberries 
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch
  1. In a bowl, add all filling ingredients and toss to combine.
  2. Evenly distribute blueberries over the filling.
To finish: 
  1. Evenly sprinkle with the reserved heaping 3/4 cup crust mixture. Bake the Bars
  2. Bake for about 60 minutes, or until the edges are bubbling quite vigorously and there’s some bubbling in the center.
  3. Place the pan on a wire rack and allow them to cool overnight.
