Char-grilled Oyster Mushrooms with Herb Butter

The weather is getting nicer, and all I can think of is grilling outside! These mushrooms are meaty, smoky, and pack a ton of flavor. I highly recommend grilling up a steak and topping it with these umami rich mushrooms.
  • 4 clusters of oyster mushrooms
  • 2 cloves of garlic, minced very finely
  • 1 ½ sticks of butter
  • 3 tablespoons sherry vinegar
  • 1 tablespoon of worcestershire sauce
  • Zest of one lemon
  • 8 sprigs of thyme
  • 2 large sprigs of rosemary, cut in half
  • Salt to taste
  • White pepper to taste
  • 4 tablespoons of chopped parsley
  • Lemon wedges to finish
  1. Preheat the grill to medium-low heat.
  2. Melt the butter with the garlic and lemon zest on low heat until just melted.
  3. Combine the butter with the sherry vinegar and worcestershire sauce.
  4. Toss the mushrooms in the butter mixture and season well with salt and pepper.
  5. Wrap each mushroom cluster tightly in aluminum foil, with 2 sprigs of thyme and 1 piece of the rosemary. Divide any remaining butter amongst the foil packets.
  6. Place the foil packets on the grill and cook for 10 minutes on each side.
  7. Remove from the grill, reserve the liquid from each foil packet, and turn the grill heat up to high.
  8. Remove the mushrooms from the packet and finish on the grill.
  9. Finish with the chopped parsley, a few squeezes of lemon juice, and any remaining marinade.
